El Sacramento – La Trasiega and the importance of the cask in the ageing process
Ageing is a long process. Our red wines spend an average of fifteen months in oak barrels before bottling, hence the importance of choosing a good barrel.
El Sacramento – De-leafing of the vine
Leaf stripping consists of removing the basal leaves that are close to the vine and the grape, in an attempt to make the bunches smaller and looser.

En Viñas Leizaola · El Sacramento realizamos catas prácticamente en cada proceso de la uva (fermentación, barrica, antes del ensamblaje final…) y también catas verticales de manera asidua para ver la evolución de nuestros vinos en el tiempo.
